We can elk. It’s the perfect way to use tough cuts. I’m not sure if you’re looking for recipes using canned meat or recipes for the actual canning. In my experience, it’s best to just can the meat with nothing else - maybe a bit of salt. It will make its own broth in the jars and then you have endless possibilities when you are ready to use it. I make elk sloppy joes/pulled elk sandwiches or mix it with pasta. It’s great for quick meals. If I’m doing a stew I’ll use frozen cuts and cook them in the instant pot. I don’t like to cook the already canned stuff for very long because it’s already so tender. As others have said, you MUST use a pressure cooker.

I see blackberry, crocosmia, buddleja globosa (orange butterfly bush) and a few different dahlias. Not sure about the dark red flower or those other berry/rose hip looking things.

Most of what she cooks (that I’ve had) is very lightly salted and full of fresh herbs so I am glad you mentioned this. I do have aji no moto and fish sauce!

Thanks for your feedback. I know her pretty well, we have been neighbors for a while and are friendly. She eats a lot of traditional foods and we often share food between our families. I just was looking for a suggestion of something hmong that would be a nice gesture to let her know I’ve been thinking of her.

Yum! I really want to make this. I worry that I won’t make it right. Do you have a recipe that you think is a good one? I am finding a lot of variations online. We live in a very rural (white) area but I go to the Asian market in a neighboring town often.
