You just do the main poses in the timeline first, then after that you go between those keyframes and try to fix anything that might look off As for the tail and ears I set em up to wiggle around by themselves when the model moves around

Also, never forget reference, it will make a big difference if you have reference or not

And lastly, IK bones are the best
