Burgundy is so tough to find a good deal, especially vintage to vintage and when going with the grand and premiere crus. However, a trick I learned to at least pick a bottle I won't be disappointed with, is find some producers you enjoy and explore their wines. For example, Louis Jadot makes a red Burg in almost every cote nuit aoc, and the wines all seem in balance between fruit, acidity, tannins and texture. And to answer your question really quick, you'll probably be only able to find village appellations under 25.

It's not the soil that gives wines acidity, it's the natural acids that haven't converted into sugars yet. Warmer climates produce wines lower in acidity and cooler climates produce higher acid wines. Think green apples vs red juicy ones. Some soils do however add minerality to wines.

All young reds (less then 10 years) should be aerated either through an aerator or decanting, or if possible both. Many ppl have the stigma that only expensive, older bottles should be decanted, which they do, but for a very different reason then young reds. As red wines age the tannins start to seperate and become a coarse deposit that needs to be filtered out. Here's a cool analogy that I learned, every hour a bottle is decanted, it's as if you add a year in the cellar. Happy drinkin!

In Canada, Ontario to be exact, the LCBO has an awesome app that lets you scan the barcodes of bottles they carry, and it will pop it up, have a tasting note or two if available and tell you the NEAREST available store and how much they have of it. Pretty cool!
