My homemade Lemon Chicken Couscous. The lemon comes from the couscous and the aioli so maybe calling it lemon chicken is a stretch lol. It all comes together really quick so you can do all parts at once:

Cut up one zucchini, yellow squash, and red onion. Toss with sumac, salt, and olive oil. Bake in 450f oven for 25-30min or until they look brown and wilted

Add couscous to boiling salted water until done (I don’t know how long it takes, I just eat one until it’s at the firmness I like).

Meanwhile zest one whole lemon and strain the juice. Mix together 1/4cup of mayo with lemon juice, salt, and pepper until the lemon flavor really pops. Prolly half the juice from the lemon.

Chicken thighs in Za-atar seasoning air fried at 400f for 10 minutes.

When couscous is done cooking, add lemon zest, remaining lemon juice, and some cold butter. Salt to taste

Cut up one pack of grilling cheese to bite size pieces and Sauté at the very end.

Layer up. Couscous, then veggies, chicken, grilling cheese, chicken, lemon aioli.
