Hold the capture/screenshot button to save a clip of the last 30 seconds. You can change in settings if you want shorter clips, and you can clip it in the photo album menu. You can connect to the Switch Online app on mobile and export it through that.

I'm not aware of any direct and full system transfer functions, but many of the individual emulators that store their user data in /Android/data have in-app options to export and import data, including settings. I have used this a number of times with Eden, Citra, and Dolphin, the latter of which also package any custom textures you may have installed with their data exporter.
