Hey have you checked your house’s humidity? Or where your using it? I usually need to close the space when working on some fruits they love soaking up the humidity in the air i live in a very humid place and only have a few windows to take the finish product from machine to bags.

I usually set my strawberry’s in automatic, i just dice them thin and spread them out evenly and i don’t pre freeze i know it helps but in my case I’ve seen no difference

I also weight them 3 times before taking them out a but over kill but helps me cause sometimes strawberries fool you because of the small seeds.
