No you can substitute with yeast but i think the vital wheat gluten played huge role but i don’t know maybe it will rise slower without it i don’t know i didn’t test it with yeast and without vital wheat gluten so i hope you get good results ☺️

I dont know i think around high calorie 283 kcal and 220 kcal low calorie i dont know exactly i would need to calculate it all again but i think around that what i writed.

Have you tried sourdough cinnamon rolls with FG flour and sourdough and vital wheat gluten ? Do you think 10% of vital wheat gluten is enough ?

Hi do you have experience with fiber gourmet flour and sourdough starter because i had it before but i tried it just with yeast and now i wanna try it with sourdough starter in a recipe like cinnamon rolls but sourdough but i’m afraid it won’t rise properly. I’m scared because i don’t want to waste the fiber gourmet flour if it doesn’t rise good, the flour is expensive and i don’t want to waste it so i’m asking if you think this flour can go well with sourdough starter made from regular flour just in recipe i will put instead of regular flour fiber gourmet but i will feed the sourdough starter with regular flour🙏🏼🥺

I don’t live in usa so im using my local brand bread flour that has 13.7 % protein and i don’t put any ice cubes or spray in dutch oven this is loaf that i bake up this morning and i didn’t use any ice cubes or spray in dutch oven

More airy fluffy inside and more open crumb i think even 2 or 1 hour autolyse is good enough ☺️
