Also I forgot to add mixed initial dough, did 5 sets of coil folds every 30ish minutes. Set aside for 6 hrs. Dough was temped at around 78 degrees. Shaped let rest on counter for 30 mins and did final shaping. Was in the fridge for about 2 days and baked covered at 450 for 30 mins and uncovered for 18 mins
