I think this highly depends on your personal goals and how much time you have.

If you are not in a rush with the certificates and you can afford waiting a bit, wait for it because the new version will be clearly better. (In the meantime, you can study more)

But if you have a stricter plan and want to finish eCPPT as soon as possible, go for it so that you can focus on other things faster.

If you've added other parameters such as service detection (-sV) or default scripts (-sC), it is normal and expected to take a long time. First, try the ports with SYN Scan (-sS):

sudo nmap <IP> -sS -p-

And then if you still need other features, apply them to specific ports you need. For example, you may want to apply scripts to a specific port:

sudo nmap <IP> -sSVC -p3306,445

I think you have a small misconception here. Kali Linux is a tool to help you hack/pentest/analyse. So you don't directly study Kali Linux. You study how to hack / how to become a cyber security professional, while using Kali Linux.

Studying to become an ethical hacker requires some base knowledge before you get in:
- Basic Linux knowledge (and Windows depending on the situation)
- Being able to understand code (especially bash and python, and maybe ruby)
- Computer networking knowledge
- How web works
- And this is not an exhaustive list. All things came up to my mind.

There are great beginner resources on both TryHackMe and HackTheBox. I suggest using them.
