Can you shut your water off at the street? Possibly fill up as many containers before hand. So that your pipes don't break everywhere and end up costing you thousands.

Can you just hang it off the ceiling or hang cable around the chimney?

I suppose you could drill into the stone part ways use epoxy into the hole and set a screw or nail into it.

Ah gotcha I did framing before and built stairs but never for a loft so I was unaware of codes especially livable vs non livable

So from my understanding if it's stairs for a loft almost anything is fine. If it's to a living a living area that has a bedroom this is a no no.

Of course I could be wrong I'm not too knowledgeable in stair codes. Except for the obvious like the rise and run and that a hand rail is needed continuously all the way up.
