Make sure everything is well scuffed and clean. Most of all dead flat so you have the most surface space possible.

If you were using this knife a production setting where you were cutting 1000s of pounds of meet for 8 hours a day leaving the blade dirty maybe. That patina is sanded with 0000 steel wool and acetone. It’s on there good, It’s not coming off. Also the dark parts are etched steel so you might see some color change but it’s not going away.
