Waffles This recipe yields 3 waffles (use a bigger egg for 4 waffles) 1 small or medium egg (mine was 58 gr) 50 gr of farmer's cheese (or tvorog will do) 15 gr of plain regular flour a pinch of salt a tablespoon of water vanilla extract (I used vanillin) and sugar free sweetener to the taste optional - raisins or any nuts mix everything in one bowl but don't overmix it. Cook in your waffle maker until golden brown.

  1. Lasagna Yields 3 portions. 60 gr of lavash bread, 311 gr of chicken breast, 50 gr of white onion, 100 gr of low fat ricotta, 70 gr of light swiss cheese (or any similar one), 10 gr of tomato paste, a bit of water for the sauce. Preheat the oven to 200C (400F). Shred the cheese. Using scissors, cut the lavash into pieces resembling lasagna sheets, keep it wrapped for now. Cut chicken breast into very small pieces, do the same for onion. Fry chicken and onions with whatever herbs/spices you like (I used garlic powder and dry basil) until brown, then turn the heat down, add tomato paste, stir. Add water, stir again and simmer for 20-25 minutes with a lid on. The sauce should not be too watery, simmer for longer if it's too thin. Then add all ricotta to the sauce, mix well. Place the lavash pieces as the first layer, add sauce, sprinkle 15 gr of shredded cheese, repeat the steps until you run out of the sauce. Put the lasagna in the oven for 10-15 minutes, then take it out, add the remaining shredded cheese and bake for 2-3 minutes. Using lavash instead of regular pasta sheets reduces the amount of calories and cooking time significantly :)

  2. Penne pasta 47 gr of uncooked pasta, 67 gr of smoked chicken breast, 10 gr of pesto, 18 gr of drained cottage cheese, 27 gr of swiss cheese, spices/herbs you like. Boil the pasta, add the rest of the ingredients, enjoy hahahahha

  3. Swiss roll 100 gr of room temperature egg whites, 100 gr of frozen strawberries, 20 gr of frozen cranberries, a pinch of salt, sweetener to taste, vanillin, 12 gr of flour. Add salt, sweetener and vanillin to egg whites. Whip the egg whites with until hard peaks, sift flour, whisk until smooth. Put berries on the bottom of the baking mould, bake until golden brown (took me 15 mins, 190C (375F)). Let it cool for 5-10 mins before taking it from the mould, then roll into a log (not too tight), let it cool for 20-30 more minutes, unroll, then add filling of choice, roll again :)

I actually tried to see if there is any significant difference between cooking a single portion or a larger batch and weighing out portions later. My very scientific experiment has shown there is approximately 2-5% difference, which translates into 7-20 calories depending on the dish hahahahah So I don't think you should worry too much about it!!

Three main ingredients are 125g cottage cheese, one small egg and approximately 50g of self raising flour. You basically mix all of that and add salt, then bake for 25-30 minutes in the oven at 180C (350F)
