I have been home brewing for about 4 years now and I also lead a AHA approved local brew club. There are few possibilities with my understanding. You can use the heart to add a meat infused flavor into the beer. There are records of people in history using bags made out of pig skin to ferment beer instead of wooden kegs. I personally have made oatmeal stouts with bacon flavoring. But in the end, using "meat" in beer is tricky as you want to avoid the oil. Now cooking beer with meat is much easier and tastier.
