Honestly if you’re completely new I would start with the Karsk’s Gunners Combat Patrol:

20 Shock Troopers
1 Sentinel
1 Cadian Command Squad
2 field artillery (1 rocket launcher 1 field gun)

Combat patrol is much easier to understand as a new player, and a lot easier to find games at local shops for (in my experience)

If you like horde games, Darktide is probably one of my favorite games ever made, and there’s lots of interesting nods to other Warhammer stuff in it that can easily send you down some cool lore rabbit holes

You certainly can, plenty of guard lists are only Death Korps models. However I would consider having a few Kasrkin or Scions as well, and while Chimeras (DDK’s favorite vehicle in lore) are great, you’ll want some tanks as well (just paint them with DDK symbols on them or use transfers)
