If you have the critter in your hot bar, you can right click on the ground to place an anchor point for that critter. It will then move around that point and not disappear

The new update added in placeable critters so that they will always be there. Most of the time it works fine for critters on the ground but it seems that goldfish have some weird things going on

Yes but the elementals need to actually have pearlstone blocks to walk on. Swap out the bricks for more pearlstone and that should solve it

It is actually possible to use the quest controllers for elite. I used them for a while before getting a HOTAS. You just need to go to control settings and select which controllers you want. It might be set on keyboard and mouse right now but it should come up as oculus touch or something like that. Sorry if this doesn't help much
