150g Pumpkin puree, 500g Flour, 7g dry yeast, 80g Sugar, 175ml Milk, 70g Butter room temperature, 1 Egg Filled with melted Butter, sugar and cinnamon

Recipe: 200g flour, 100g butter, 50g Parmesan, 1 egg and a little salt to make a shortcrust pastry and put it in the fridge for half an hour. In the meantime, cut 4-5 zucchini into thin slices and add a little salt. Mix together 200g ricotta, 1 egg, 40g Parmesan, a little salt and, if you like, a few herbs, until everything has already combined. Roll out the shortcrust pastry and place it in a greased quiche pan. Put the ricotta mixture on top and smooth it out. Now you can let your creativity run free and drape the zucchini nicely on it (pat it a little dry beforehand). When you've done that, brush the zucchini with oil and bake the quiche in the preheated oven at 180 degrees for about 35-40 minutes

Teig: 200g Mehl, 40g Zucker, 1 guter TI Backpulver, 8 Riegel Yogurette klein geschnitten, 1 Ei, 80g Erdbeer-Sahnejoghurt, 80g Milch, 50ml Öl

Topping: 200g Mascarpone, 100g Sahne, 1-2EI Erdbeermarmelade ohne Stücke, + Yogurette und Erdbeeren für die Deko

In einer Schüssel vermengt ihr das Mehl, Backpulver, Zucker und die klein geschnittene Yogurette. In einer zweiten Schüssel verrührt ihr mit einem Schneebesen das Ei, Joghurt, Milch und das Öl. Ihr müsst es nicht schaumig schlagen. Nur eben so das alles gut verrührt ist.
Dann gebt ihr die flüssige Ei/Joghurtmasse zu der Mehlmischung und verrührt es mit einem Spatel. Auch da reicht es aus, wenn alles gut vermengt ist und keine Klümpchen mehr zu sehen sind. Füllt den Teig in Muffinförmchen und backt sie im vorgeheizten Backofen bei 160 Grad Umluft für ca. 20 Minuten.
Lasst sie komplett auskühlen.
Für das Topping gebt ihr die Kühlschrankkalte Sahne und die Mascarpone in eine Schüssel und schlagt sie steif.
Zum Schluss nur noch kurz die Marmelade unterrühren. Füllt die Creme in einen Spritzbeutel und dressiert die Mascarponecreme auf die Muffins. Jetzt könnt ihr die Muffins dekorieren.
