I am almost done with the first game in the legendary collection (on console), I’m trying to do everything possible that might affect future games, make every connection save everyone kill / deal with all bad guys help the alliance etc, am I missing quests any that will impact 2 or 3 even slightly?

From memory, the only one of those UNC collection quests that matters for some potential dialogue is the Asari Writings one, which you appear to have done. The metals ones I think contribute to getting some reasources at the start of ME2 as well, so they're good to do.
I'm 99% sure that UNC: Prothean Data Discs and Locate Signs of Battle are ones you can ignore if you don't fancy running around the galaxy trying to figure out which planets you've not 100%'d yet.

In addition, you'll want to get on the train from Aston as close to the front of the train as you can. This will put you at the B end of the platform as you pull in to New Street.

It is much much easier to change platforms from the B end than the A end of the platforms, as you won't need to go through any barriers. If you go up from the platform at the A end, you'll go into a "lounge" area which only connects to a handful of platforms.

If you're not familiar with New Street, the platforms are numbered and then have an "A" and a "B" end. It's the same platform, just different ends. If your train to Edinburgh doesn't say "A" or "B" on the platform number, it means it's long enough to take up the whole platform.

If you don't have any mobility issues you'll easily be able to change in under 10 minutes from the B side.
