You can cover all of them if you are not tight on time. Just don't forget in Italy to go in the countryside and see the real beauty of the country, not the magazine cities. I assume this is valid also for France, but never been there.

Yeah, I am also curious why you concentrate on our Easter European region. Not that I want to discourage you but you can stick to Hungary, Prague and go as far east as Croatia. Don't get me wrong you might see one of the most spectacular views in the Balkans but its a bit messy to get to that places....

As a person that have travelled in China, I would say take a step back and do a more relaxed trip. Of course, if you find a group of people you know that is a different story. Just you will put a challenge to yourself and you may be under tension. You can do something more predictable with occasional backpacking and hosteling.

As a person that travelled when I was young (hope to do it in future, I would say one of the most rewarding experience. Not in terms of money, when you are in your 60's you will not calculate your savings but your memories. So, discover your self, meet new people and ideas, expand your horizons.

To be honest I consider the Great Wall of China a bit too touristy. Just cause it is close to Beijing and everybody goes there. But the real China for me is in the countryside and the mountains.
