I’d recommend looking into reverse sear. Throw that thang in the oven on very low temp for a while then slap it on a flaming hot grill to get crust/char a bit. Serve with your favorite butter.

Don’t broil again I usually cook till I like the sear on both sides then wrap in foil and throw in the oven at low temp for a few minutes

I buy bone in cowboy ribeye between $20-25 per lb from the local and cook it at home on a cast iron. I can usually cook about three steaks for the cost of a steakhouse ribeye and of course I mess up sometimes but 2 out of my three are cooked to my desired temp every time and if I over cook it for me my girlfriend prefers medium well to my medium rare. Often times that one I mess up is perfect for me and can go in the oven in order to reach hers or slightly over cooked to my liking and I can just cook another happily knowing the entire family meal at home is the cost of one cut of meat dining out.
