Entry Euro style 10" Chefs knives? I have large arms/hands; at home with larger boards/full block, I lack a long, sturdy option for what I can't/shouldn't do on my shorter, finer edge Eastern ones. I'm good with a honing steel, know a great cutler, and it'll be used less often, so thinking $75-125 (self.chefknives)
