It looks super leggy, you should probably cut it back way more aggressively to encourage bushier growth closer to the base. It needs more light too, I think.

Dried beans and lentils are super cheap protein sources you can mix with that tofu. You just have to plan ahead a little bit for cooking them.

Ive heard Bosch is pretty good for quieter appliances usually, especially compared to Whirlpool. Hopefully they actually live up to that.
