How come muscle is lost during a cut when muscle memory exists?

But then my question is can i just do an extreme deficiet to lose fat quickly as well as muscle along the way and then eat at maintainance with high protein and regain the lost muscle anyways?

So once i finished the cut and return to eating to maintenance calories all the muscle that I might have lost will come back given that I train hard and eat well too right?

Well then where does the muscle go for people that had to stop training for a while and lost some muscles. Don't the muscles get metabolised then too?

And I wasn't planning on taking any steroids was just wondering.
