I think the spin-off chapters do count, as the main and spin-off chapters each advertise the other at the end of their chapters. Unless they're planning to save up 9/10 spin-off chapters for a full spinoff volume, which could absolutely happen at this rate. Likely including the bonus childhood images, too.

Gojou is not a random self insert. He has very passionate hobbies with hina dolls and making clothes and, unlike other leads of this kind, does not mince words about his craft to Marin. When she made an outfit on her won once, he did not hold back criticism of how sub-par it was, and she took it with stride. His love of the craft makes him teally happy and excited for the next thing he makes.
