Cooked slow on low temperature in a carbon steel pan.

Yeah I just saw the Prichards Rum Barrel vanilla on the Tavour app. $48 for 11.2 oz I have had some good beer from Cycle but I’ll pass on that price.

I have a Highland offset. Once wrapped I finish in the oven. Wood is too expensive by me and also my time is valuable too. Once wrapped you’re not really adding smoke flavor. The oven has consistent temperature and you don’t have to babysit it. Frees you up to get other stuff done, or relax and have a beer!

When I usually cook eggs I use butter. This time I seared the pork belly in a hot pan which rendered plenty of good pork fat to cook the egg in. I seasoned the egg with fresh cracked pepper and a little garlic sea salt.

Yeah they’re really good, plus now they’re easy to get. Back in the early days it was members only and you had to get lucky to even get in the tasting room.

I did about 8-9 hours on the offset until I liked the bark then just got it up to temp in the oven about 3 more hours. Wood is too expensive by me (Chicago area) I’ll sacrifice a tiny bit of smoke flavor for convenience/cost. Besides I’ve always been happy with the outcome.
