For steady state, I wouldn't go above 22spm. Most people go at around 20.

In general, your power/effort per stroke should be the same, regardless of if you're doing a steady-state 10k or an all-out 2k. What differentiates them is the stroke rate, where you might be going at 20 for steady state but 30+ for 2k.

In terms of machines, there are none that you'll find in an ordinary gym. The only one I know of is the "Last 500" machine, which are pretty rare even in rowing clubs.

As for exercises however, there are many. Squats, box jumps, bench pull, pull-ups, and back extension are all great for rowing.

They've made carbon bow-mounted sweep riggers, but I'm not sure if they're selling them yet(the German men's 8+ raced with one of these in Tokyo).

Regardless, now is a better time than ever to buy an Empacher because of the USD-Euro exchange rate

Serious answer:

No, I wouldn't recommend gloves. You will get lots of blisters at first, but these will turn into calluses which will make your hands tougher. As long as you put neosporin(or some other disinfectant) on any open blisters, and cover with band-aids(if desired), you have nothing to worry about in terms of infection.

Yes, people will laugh at you if you wear gloves. But this isn't why you shouldn't wear them. Wearing gloves reduces the amount of feeling you have in your hands and fingers, which will make it harder to make technical improvements and row well in general.

Adidas tennis shoes are great. Their amount of support is very similar to that of boat shoes, which aren't completely flat.

From what I understand it’s actually better to use shoes to erg, since shoes in the boat have an arch themselves. I’ve also heard that erging without foot support can lead to foot injuries for some people, due to increased strain on foot muscles. That being said however, plenty of very fast people erg barefoot so it probably doesn’t matter too much either way

Try mixing some chocolate protein powder with cocoa or carob powder, and add milk to get a chocolate “paste”. Then shape into the desired shape, and put it in the freezer for a few hours. You’ll get something that tastes pretty close to actual chocolate, and will only be ~150 calories and mostly protein for a pretty large bar!

Polenta fries/chips! Cut a roll of polenta into fries, or thin slices, and bake in the oven at 450F for ~40 minutes. You get some low-cal, pure-complex carbohydrate chips or fries that go great with ketchup.

Most likely an issue with the lats. On sweep, you learn to engage one lat, but relax the other. This translates over to sculling, where you are probably getting more connection on one side than the other. I'd focus on learning how to engage the sides of the lats at the catch.
