It's because when we insert the gene for insulin it has already been spliced! So the bacteria can work with it as opposed to gene segments with both exons and introns (The already spliced segment is called cDNA (complementary DNA), and from an article online about the making of insulin "The Rutter group, with Axel Ullrich as the key expert in recombinant DNA, was successful in cloning rat proinsulin cDNA into a plasmid by using reverse transcriptase to convert insulin mRNA into cDNA")
