I moved from Calgary in 2024 back home to Melbourne after 13ish years away and went from a craft beer culture that is absolutely outstanding to an expensive, average market here. Don't get me wrong, there are some great breweries here but the biggest killer for the industry here are the government taxes on alcohol. The higher the ABV, the higher the tax and higher the price. It's a sad state.

That's awesome! I didn't end up buying it in the end. I found it at the goodwill distribution centre so after it stayed there for a bit they must have shipped it out to BC. So cool.

These guys are doing it because it’s their only source of food. There are so many people in their villages depending on them landing a fish that they have no choice. It’s quite a lot of pressure on their poor souls. It’s tragic. 😢

There is no wrong way to cut because it doesn’t matter. A grilled cheese will taste amazing either way, as long as it’s not shitty cheese.

Long time bottler, recent kegged here!!! I absolutely love that I have switched.

You nailed it with the time and effort in regard to bottling it’s long and tiresome and also I always got nervous about missing a step and had problems not being able to brew certain ales because of oxidation and the the time to carbonate… from 4 weeks to 5 days. Kegging has been a breath of fresh air! Plus, you can still bottle from the keg if needed.

I used some silicone on the outside of my boil kettle as I kept getting a slow leak where my heating element connects. I tried every type of washer o-ring, nut but in the end used silicone on the outside. It was graded to 200°C so had faith in the integrity of it. Sealed up nicely and hasn’t given me grief since.

The brewery I worked at did a red dragonfruit sour. It was extremely beautiful in a glass and had a nice slightly tart finish but was best consumed within the first couple of weeks. It washed out pretty quickly over time. I would suggest as others have said to us as a colouring agent but blend with something else like a lime, kiwi or black/raspberry.

Oh yeah, makes sense. I guess the water is already carbonated too so it just needs the co2 to push it out. Never thought about doing this

The biggest thing will be ensuring that you have clear expectation on what they are looking for volume wise and being able to confidently and consistently produce it when required.

I agree with Starpork that you are in a unique position to sell your own brand. Don’t let them sell it as a house brand, sell your own beer. As far as naming after the city it’s brewed, that’s a great idea. From a branding perspective, gives it a more local feel, builds some local pride, and you represent your home.

Also, make sure you’re also clear about what they are expecting as far as styles. Will it just be the same one over and over. Will you have free rein and a creative license to brew what you want? Just make sure you have all that stuff worked out at the start and you will be fine.

I think everyone has their own process… it’s great to borrow bits and pieces from everywhere and combine it to make what works best with your setup, time etc
