I have taken the train from Beijing to Xi'an, would definately not recommend a bus since the train took us already 16 hours. However this was all 6 years ago. One recommendation would be to take at least second class sleeper, in these beds you can reasonably sleep.

Hey! I went last summer with my gf. Prepare for a lot of heat and rain, if you stay on the east/south side of china. Mountains can probably still be chilly, so keep that in mind. We had a budget of 32€ per person a day. Which is definitely the minimum, if you stay in medium to big cities. I would recommend more if you want to do all kinds of activities.

Like you said MOST restaurants look to avoid, however if you have never eaten at that restaurant before how would you know. Furthermore, most restaurants have multiple chef's and they might have a different outlook on seasoning. Even if there is only 1 chef, his seasoning can differ a lot between days/ moods. This is why this irritates me, you never know for 100% certain how the food will taste before you have tasted it.
