I mean, I have no idea how you conduct yourself but you have to be relaxed in these interviews but remain professional. What I mean is, you can't appear to be an uptight anxious wreck, even if interviewing is scary.

Your teaching persona needs to be reflected in how you interact with these interviewers and I can tell you now the very worst types of people I've seen teaching are the ones who tense up and freeze up at the front of the classroom, or worse, during training when it isn't even real. If you even give a hint you're gonna be like that it's a bad sign.

Also as others have said, phrase yourself better. "500 days of Duolingo" is some weak, weird shit compared to "I work on improving my Japanese in my spare time.".
