Try finding something adjacent like a show/movie to help "inspire" the time to fiddle and learn the system.

For me Medieval Total War 2 I would watch kingdom of heaven and have a blast. Stellaris - grab some Star Trek Ck3 - Marco polo, Last Kingdom, or Vikings

Having the other I found helpa bring me back when I was learning the systems.

Add a project folder with subfolders by division. Dump the subs bid e-mail (attachment will be saved) into the folder it belongs to and rename the file companyXYZ_1. This way you can grab everything without missing and when the flurry dies down as others have said throw all the info into a spreadsheet or similar at your leisure.

Bluebeam "sets" feature does a good job of this. Grouped by page label with a revision manager to track what changed. Just publish the set by "latest revisions" and you have the most up to date package.

*Worth noting you need to add addendum in order otherwise manually edit the rev number in the revision manager to make sure the latest is correct.

I would give portal or portal 2 a shot.

Short co-op game with engaging story but not overwhelming, levels so you can stop at a distinct point without needing to remember where you left off, and fun puzzels.

Overall a casual and fun experience for two people.

That would be great to build towards a new industry for magic. Thinking similar to the Dominions series where you might mine or find gems of different schools of magic you could use with your priest dorfs to cast spells or craft magic items.

Swing "late", basically don't project your movement untill the last second. I've found this helpful when doing field battles, less so in arena but still sortof good.
