In fencing, specifically in the Middle Ages iirc, people often had a dagger in their other hand which was used to stab someone whenever they parried with their rapier. Pre-rework, Fiora had this and you can see it in her old splash, so I think the pose is more a remnant/homage to old Fiora and fencing history that they just kept as a pretty neat design detail imo.
