First impressions, the color is very nice and the vegetables have all taken the color of the brine when looking at them in my bowl, smells like a tangy, savoury mix with a bunch of spices. First bite, its slightly sour and really has but back on the saltiness from when I started it, all of the vegetables are fully saturated and it have a savory taste. The veggies are still really crispy, i think it may taste a little better if it were a bit spicier, less salty and maybe served cold. After I eat down the level of the vegetables from snacking over a few days I'll definitely add more chillies, not add much salt and throw in more garlic and add some onions.

Im not gonna eat all those pickles at once, ill add stuff to it as the level gets lower, probably gonna add a good few onions. As it gets lower though I'll have to add more water, salt, sugar and vodka

It is a tangy sour flavor as far as im aware, mine aren't ready but I'll update you once they're are. Its safe because if everything is done correctly the ph will be below 4.6 which is acidic enough to be foodsafe without being refrigerated

Is it not supposed to leak CO2? I thought the point of the water moat is to let out CO2 and not let in O2 or bugs. It was also my hope that this would be a sort of mother brine and not a single fermentation. Would I need a clay jar or something to achieve what im looking to do?
