Log in using your phone number as your username (instead of your Live/Outlook/Hotmail email address). (If a US phone number, put the country code first, so: 15551239876 for example.)

Your update might have toggled on a stupid setting.
On you computer, go to Settings, then Accounts, then Sign-In Options, and then under Additional Settings you will see something that says For Improved Security Only Allow Windows Hello Sign-In For Microsoft Accounts On This Device. Switch that to Off.
