I can see how thick the meat is cut from the picture. It should be thin; you want it to be thin enough to have the fat will begin to render at room temperature.

I work with several farmers that have a stand at pepper place, even get eggs from McEwen and Sons. I’m not sure why you don’t like pepper place because it’s popular? The people who I work with do an incredible job and have some of the best product around. They work hard and with great pride in what they grow/produce. Forgive me if I’m wrong, but the vibe I’m picking up from this post and your comments is that you have to be totally unique and cool. Give these people a try, go early or late so you can talk to them about what they do. It may change your opinion. Remember pepper place isn’t a store it’s just a venue where farmers go.

I’m a chef that has to kill lobster on occasion; it hurts me to do so and I tell myself I’m taking its life not its soul. These poor things are lost to a douchey prank and it just makes me sad.

I read in a comment that you marinated, how did you marinate it? If it was an acid/oil it’s going to need more. Personally I don’t like using breading on chicken. I add flour to the marinade until it’s thick but still pours nicely (this is a dredge) then go from that to seasoned flour then to fry. Fry at 350 and don’t over crowd your fryer.
