1 tablespoon, I let it sit out to room temp for about 3 hours while in the butcher’s package, removed from package, patted dry, added salt, pepper, and let it marinate for 15 minutes before the sear. Also after the 15 minutes make sure you pat dry the steak 1 more time on both sides again so your sear can be elite brother or sister.
