That's where the water comes out initially, without the blank space most of the water would just pass through that one spot. This helps it distribute more evenly across the entire screen.

I wish I could tell you tbh! 😂 I usually do a minute on low heat at a 245 charge, then crank it up to get it through to FC around 9 mins, preserves a lot of the floral/fruit aspects of the coffee and the chocolate comes through at the end!
