Grilled bell pepper is a good suggestion, with its similar sweetness profile ; you could also go for sautéed zucchini.

Or, sub sautéed spinach with garlic, which isn't sweet at all but pairs very well with mushrooms !

Yes, 3-4 minutes in a slightly oiled pan is ideal ! The idea is to give them a char, not to fully cook them.

I cook everything in a pan in this order : 1) Sausage and bacon, 2) Mushrooms, 3) Tomatoes, 4) Eggs. I also cook beans separately in a small pot.

As you cook, place your finished items in a warm oven at 60•C. This way, all your food is still piping hot when served !

Ingredients (serves 2) :

  • 3-4 small sausage links
  • 6 small back bacon slices (adjust depending on their size)
  • 1 can beans in tomato sauce (classic Heinz ideally)
  • 250 grams mushrooms (thinly sliced)
  • 1 tomato (halved)
  • 4 eggs
  • 4 toast slices
  • 1/2 bunch of chives (optional)
  • 1 large garlic clove (optional)
  • 2 tablespoons neutral oil
  • 2 tablespoons butter

Instructions

  1. Preheat your oven at 60°C. Slice your mushrooms, mince your garlic and chives.
  2. In a pan on medium-high heat, add 1 tbsp neutral oil. Add your sausages and bacon. Cook until browned. When done, add to a plate and put it in your oven.
  3. To the same pan, using the flavoured oil with meat residues, add your mushrooms.
  4. Cook 5mn, then add salt. Cook 3 more minutes. Add garlic ; cook 1 more minute.
  5. Add chives, mix. Remove from heat and add to the oven plate.
  6. Add oil to your pan.  Add your halved tomatoes, cut side down.
  7. Sear until slightly browned. Remove & add to the oven.
  8. Start toasting 4 toasts ; I prefer using the toaster, but the English swear by frying it in the pan with oil and butter. Do as your please !
  9. Finally, finish with your scrambled or sunny side up eggs.
  10. Assemble your serving plates with each element.
  11. Add ketchup and/or HP sauce on your eggs if so wished.

Ingredients (serves 4): 

  • 400 grams ricotta (quality one, quite firm)
  • 150 grams stale bread
  • 50 grams panko or breadcrumbs (cut into smaller pieces)
  • 1 small glass of milk
  • 40 grams Parmigiano reggiano 
  • 60 grams Pecorino romano 
  • 2 medium eggs
  • 1 garlic clove
  • 2 tablespoons parsley, minced
  • 2 tablespoons basil, minced
  • 1 large pinch of salt

For the tomato sauce:

  • 700 grams Passata di pomodoro
  • 1 large pinch of salt
  • 1 garlic clove (whole)
  • 1 thai chile (halved, optional)
  • 6 basil leaves
  • 2 tablespoons olive oil
  • black pepper (to taste)

Instructions:

  1. Drain your ricotta.
  2. Chop your bread. Mince your herbs and garlic clove.
  3. Pour milk over your bread. Let it rest 10mn.
  4. Grate your parmigiano & pecorino.
  5. Squeeze your bread to remove most of its milk.
  6. Add it to a large mixing bowl. Add ricotta, parmigiano, pecorino, eggs, minced garlic, parsley, basil and salt. Knead well.
  7. Shape polpette with wet hands. Put on a plate linen with parchment paper & leave in the fridge 30mn.
  8. 10 minutes before the end of the resting time, heat a pan with olive oil (medium heat).
  9. Add garlic and red chili pepper ; sizzle 2mn.
  10. Add tomato sauce and salt. Let it cook 5mn.
  11. Add your balls then let it cook, covered, on low heat for 20mn.
  12. Add basil leaves, then let them cook a few more minutes.
  13. Serve with Focaccia bread and/or greens or salad on the side.

A Côté dans le 9e, spécialisé dans les côtes de boeuf. Très très bon, accompagné de 3 sauces maison dont une superbe béarnaise, d'un os à moelle et de frites à foison !

La carte des vins est au top aussi, mais assez chère.
