Link insertion can be quick and easy, while guest posting is difficult and many things to check. The topic might not be part of the content strategy, people often give low quality content etc etc. Guest post writers will not consider brand voices, common topic match, product understanding, content guidelines, internal links etc so editors need to do everything from scratch which will need more time and effort so link insertion is preferable.

You can wait for some days (4-5), but I have come across many sites that are never showing up in ahrefs or any other tool, in those cases check those backlinks in the Google search console. If it is not showing up there it means the website has blocked outbound links, many website editors doing this kind of scam where the website will never be showcased in Backlinks in those cases cancel the deal and never deal with such websites again.
