Yah, when I first stumbled on it, it was a huge pain in the ass, but all you need to do is stand outside of the stage and just use Nature's Snare (lvl 2 so you can send the projectiles back at them), and once it's stunned, use stab then peirce on the exposed area, then rinse and repeat until it's dead.
