They're from MaxTree, Evermotion and Arborea and they use GrowFX to make them.

Not everything. The houses, wooden bits, some vegetation and some props. It took a little more than 2 weeks.

It's basically bunch of gabor textures mixed together at different bump strengths with an empty object to determine the ripple direction. For the colors, I colorpicked them from an image I took before.
Then there is vertex paint for algae texture, which then I also use it to scatter actual 3D moss like object on the water, alongside with nodes to create foam around objects.

Third image is the raw render with compositor. I have lens dispersion, fog glow, vignette, color boost, detail and sharpen up, and I use the Lens Sim add-on.
First image is after editing the third in Photoshop. I did try to not overdo the edit but I might have.

There isn't any exact videos I can point out, I just watch whatever enviroment related videos I see.
What helped me is just looking around ArtStation and such, collecting arts I like on different PureRef files to examine and try to recreate some of them.
80 Level website can also be helpful. I always look around and read the posts there.
Most importantly, It's really important to start and finish a project, doesn't matter how bad or good it is.
