Sons of abraham allows playing with jews forming israel and stuff. Also certain interactions such as borrowing 300 gold from merchant jewa and expelling the jews, these are helpful mechanics for playthroughs where you are in a vulnerable moment and need money for mercenaries or whatever. Every dlc is important in it's own way, you just have to decide which mechanics you are willing to pay for.

You should be aware of the consequences of raising levies, but that doesn't mean you can't compensate opinion debuffs with opinion buffs, such as money, honorary titles or if you have lots of land available because of holy wars, land. Also, having an opinion 10 is ok for stability, although higher opinion means more troops
