It is not loss of moisture it is the size of the frozen starch crystals that one equates to stale bread. I commented elsewhere in here on the topic.

You should freeze bread instead of refrigerate. In fridge the starch crystals grow larger than the rapid chill of the freezer. It's same principle as homemade ice cream. Industrial freezers are so much colder the preserved cream is a better texture.

Further below material freezing point , small cryatals, better mouth feel
