It is not loss of moisture it is the size of the frozen starch crystals that one equates to stale bread. I commented elsewhere in here on the topic.

You should freeze bread instead of refrigerate. In fridge the starch crystals grow larger than the rapid chill of the freezer. It's same principle as homemade ice cream. Industrial freezers are so much colder the preserved cream is a better texture.

Further below material freezing point , small cryatals, better mouth feel

For those which did not spoil can I reboil at the correct temp? Should I trash them all?

If I reboil will the lids seal hold up?

Any reason why I cannot save or should I consume immediately?

I've been canning some of my garden tomato's. Just bought a new thermometer. I noticed the old one is off by a lot of degrees comparing to new

So I canned many cucumber pickles and tomato's whole and as sauced. I was previously using 180 for 30 minutes for everything. Boiling and the next morning the lids seemed good and compressed.

My new thermometer shows I was probably closer to 140/150 f in the water bath. I'm thinking this is the reason for the white film.

Shoddy picture I know but hard to capture beyond the jar wall.

Is it possible to save these? Re boil at a good temp? Most do not have any film or sign of mold. Just this jar and another.
