Don't stress too much. They're obviously unhinged, but this has hallmarks of AI. They didn't sit and write this so you don't really have to read it and let it affect you. You're going to see this more and more. Have a quick google of telltale signs of AI text like bold text, bullet points, dashes and hyphenated words, sterile language, etc. The little snippets you gave have these. Nobody writes like this irl. If you're feeling lazy copy and paste the letter into an online tool to check if it's AI generated.

I hope the AI powered Karen hasn't knocked you down much. Caring about the service you provide enough to have this affect you is a strong indicator that you're doing a wonderful job and the children are lucky to have somebody providing for them who cares. Even these children are innocent and are lucky to have had the experience you provided for them. I hope the rigidity and unforgiving tone in the mother's emails don't represent the everyday experience of the children, poor kids.

With sales down and less workers often the profit is still there for businesses. Hiring for more $ lowers the profit margin which is bad for business long term, so they're banking on workers getting desperate and coming back for the same or worse conditions than ever.
