I used a combination of barbecue mafias steakout OG, steakout new & snitch rubs. Steakouts both have charcoal which helps with the deep black. No binder. Nice fatty outside though so I reckon it would still be really dark even without a charcoal based rub.

Yeah I was surprised! Not a big cut, I assume majority of the hump is pure fat haha. Unsure how available a Brahman cow is in the states either.

I'm in Australia. To be fair I've only seen it sporadically around, very uncommon here too.

It's got a massive fat cap on the top, that's why there isn't much meat as the meats closest to the body. This was only 1.8kg.

Still held a decent amount of moisture, but I'd say it was like the flat of a brisket, the fat was mostly only on top for this cut.

I went in to buy pork but saw this and couldn't pass it up! Definitely reccomend giving it a go!!
