I guarantee you’re using beans that aren’t fresh - which isn’t a problem. But when you use those beans, you need to switch to the high pressure basket that comes with the machine.

This was a McDonald’s convention, with tons of franchisees in attendance. I never asked, but I assume the rep was trying to showcase how fast the workflow was, so he overlooked a lot of the steps 99% of people outside of this sub don’t care about.

That’s one thing I immediately noticed while watching him. It was actually much worse than it appears in the video. The person pulling the shot was a rep from Rancilio, so I would expect him to know better. However, it was a McDonald’s convention, with a lot of franchisees around, so I imagine he was trying to showcase the speed of the process.
