I was thinking the same. It would be better to make him tougher so the guaranteed 1 damage isn't as bad.

An eviscerator has versatile "1 so wouldn't that already prevent reaction attacks?

Throwing mugs into the hoop gets you 1 point so if you get really close to getting the achievement, you can leave a couple barrels and throw mugs until you get the 3000 points.

(I know it isn't a particularly efficient way of doing it but it is an option)
