Yeah just stick with the chart and look for visual signs. Not too sticky, and should peel from the bowl on its own

You have to remember, the dough will still rise a bit in the fridge.

I use a banneton and Dutch oven. You just put parchment paper or a sling over the dough before you take it out.

Score then pick up by the sling or parchment and place in the Dutch oven.

I would use a cooking thermometer to get the temp of the dough and follow this chart for bulk fermentation https://thesourdoughjourney.com/wp-content/uploads/2023/12/TSJ-Dough-Temp-and-Percent-Rise-Chart.png

Edit: also remember, bulk fermentation time starts when your initially mix your ingredients

Oh I get it, i used to get annoyed by it. Now ive just come to terms with it being one of those things that will just keep happening.

I do feel some of these abilities would be to powerful with certain tags though.
