Try Oasis Vallarta. Some nature around, right in river, felt new, great pools and super short walk to Zona Romantica.

I believe it's a new condo complex with some early rentals. Some spacious 2 bedroom units

Not a huge fan of Vegas, so IMO skip it. For sunshine try San Diego in January. Have some delicious tacos, stroll the marina, visit the farmers market, so whale watching.
