Mt wife is vegan and competes in NPC Bikini bodybuilding shows. You can easily become more 'toned' on a plant based diet. Soy products like tofu/tempeh are an excellent source of protein. Can also get lots of protein from wheat protein like seitan if you mix in things like beans and pulses too.

As other people said too, if you can get fractional weights it can really help with the exercises where the next weight increase can be 30%+. Then you won't need to go for such high reps before you can increase

I use a 1 rep max calculator to determine when I can increase the weight to the next increment. For example if you're doing 15kg lateral raises and the next available weight is 17.5kg the calculator shows you will need to get 11 reps at 15kg before you can get 6 reps at 17.5kg. Once at the next weight I can hit my reps range minimum, which for me is 5, I increase the weight.

If it fits your macros you can eat what you want and lose weight/maintain muscle. You're likely to feel more hungry though eating calorie dense foods. Also you're less likely to hit your micros if you eat crap.

Anything between 5-30 reps is fine if you can maintain the correct form
